This chili recipe is a result of my student time experiments on the fine balance between culinary pain and extacy (the Tzar bomba version). I published this recipe in Usenet and as a result this chili represented Finland in the Chili around the World web site and it can still be found in the TC Bunch chili recipe collection. This version 1.1 contains some minor typo and bug fixes.
One kilogram of cheap cow meat
800 grams (2 tins) of crushed tomatoes
1 bottle of beer
25 ml (Little Boy) to 1 dl (Tzar bomba) of chili powder
15 ml of ground cumin (Jeera)
10 ml of cayenne pepper
30 ml of brown sugar
1-2 red onions, depending on size, chopped coarsely
2 big garlics
8 fresh chillies, preferably of different kinds
5-10 dried chillies depending on size
3 bell peppers
2 meat stock cubes
30 grams (about 50 ml) of corn flour
400 grams of kidney beans
Chop the onion coarsely. Seed and chop bell peppers into small cubes. Seed fresh chillies and cut them into rings. Clean the meat and cut it into 1×1 cm cubes. Peel garlic gloves, halve half of them and chop the other half coarsely.
Brown the meat cubes in oil.
Put the crushed tomatoes and the beer into a big pot and the pot on fire. When the pot boils, put the browned meat cubes into it. Add chili powder, ground cumin, cayenne pepper, chopped onion, fresh and dried chillies, bell peppers, meat stock cubes, sugar and chopped garlic cloves.
Add some oil, if the meat had no fat in it.
Put the lid on the pot and let the chili simmer slowly for some four hours and stir it every now and then.
Add the halved garlic gloves
Wait for another hour.
Add the beans.
Mix the corn flour into about a deciliter of water and pour the water into the pot. Simmer for another half hours, stirring regularly. The chili burns easily to the pot bottom at this stage.
Enjoy(?) with rice, green salad, lots of maize beer and handkerchiefs
